Breakfast.........most important meal of the day!
Gooey boiled eggs with soldier toasts collected from my girls........ a heartening porridge in winter......muesli in the warmer months with lots of fresh fruit. Breakfast is a meal I never miss out on! Trouble is when it comes to muesli, I am really fussy!
That's when I turn into Goldilocks...
My muesli has to be just right........ not too many sultanas, dried fruit that I like, lightly toasted, special nuts. You think that would be a pretty easy thing to find.......but after years of frustration, packets and packets trialled, I finally started to make my own. The chooks had a bonanza during this time of muesli failures!
And it was just right.........
I generally have a large range of nuts and seeds in the pantry, for all the baking that I do, and making up a batch of muesli is a great way of using all those nuts up, especially if they are getting close to their use by dates. You know, those little containers hiding up the back of the pantry.......
It is also a good way to try all those "fashionable" nuts and seeds like chia.
Try making up your own special blend.....
1/3 cup walnuts
1/3 cup flakey almonds
1/3 cup hazelnuts
1/3 cup brazil nuts
1/3 cup pepitas
1/3 cup linseed
1/3 cup chia seeds
1/2 cup dried currants (place currants in after you have toasted the muesli)
1/3 cup maple syrup
1/4 cup rice bran oil
1 packet oats
Pre heat oven 170c
Place all ingredients in a baking dish - Add maple syrup and rice bran oil, give it all a good stir to coat.
Toast/bake in oven for approx. 40 minutes. I don't like mine too toasty.
Important keep checking and giving the mixture a stir every 10 minutes or so.
Cool and then pop in your currants.
Use a rolling pin to lightly smash the larger nuts.....

Tip the packet of oats into a largish baking dish and put in all the nuts and seeds.
For a bit of sweetness......we don't want boring.... maple syrup and a splash of rice bran oil.
Store in an airtight container. Done!
This morning I had some local strawberry yoghurt and a muesli topper with some delicious berries.
And goldilocks thought this was.......just right.....
