ROCKY ROAD CHRISTMAS CONES

AN EASY CHRISTMAS RECIPE FOR ALL THE CHOCOLATE LOVERS OUT THERE ...... AND I KNOW THERE ARE LOTS OF YOU.

Many ladies that I know, have their traditional Christmas pudding or cake recipes that are lovingly cooked each year. Not in our household! I don't know how it started but years ago I made one of these for my dad..... a giant one. And the tradition just grew from there. People started asking me to make them..... our son would not even turn up for Christmas if I hadn't made them....now it extends to his friends also. I love the fact that I can "dress" them up as a hostess gift....much nicer than a box of chocolates.

ROCKY ROAD CHRISTMAS CONES

(makes 7)

WHITE SECTION

2 x 375 grams White Chocolate Melts

100 grams Pistachios, roughly chopped

100 grams Craisins

10 pink marshmallows chopped

MILK CHOCOLATE SECTION

2 x 375 grams Milk Chocolate Melts

100 grams Macadamia nuts, roughly chopped

1-packet Pink and White marshmallows

To Make Cone Mould

Cardboard and baking paper

Make a cone shape from the cardboard ensuring baking paper is on the inside, secure with tape

MAKING THE ROCKY ROAD

Melt white chocolate melts in a large bowl– follow packet instructions (I microwave mine)

Reserve ¼ cup melted white chocolate and pour into the cone mould. (the reason I do this is so that you get a proper “tip” to the trees because sometime you can get a nut or a blob of marshmallow…it’s gotta be pointy)

Combine pink marshmallows, Pistachios, and craisins until well combined. Spoon mixture into cones. You have to work fairly quickly as the chocolate will cool and harden.

Melt milk chocolate melts and then combine in a large bowl with the white/pink marshmallows and Macadamia Nuts. Spoon mixture into the cone on top of the white chocolate.

Place cones pointy side down in sturdy glasses or vases. So they don’t tip. Let them set overnight.

They can be stored in the fridge if it’s hot. .

Take the cardboard and greaseproof paper off and there you have Rocky Road Christmas cones.

Measure out all your ingredients..... Marshmallows

and chop the following Pistachios, Craisins and Macadamias.

Make your cones....have everything ready....for the chocolate part.

Melt white chocolate first as per packet instructions..... I microwave.

Save a 1/4 of a cup of white chocolate to pour into the tips of the cones.....for pointy ends.

This is my vase that is perfect for holding up the cones.

White chocolate is nice any runny....mix in pistachios, craisins and pink and white marshmallows. Put even amounts in each cone.

YUM...guess who got to lick the spoon..

 

 

Tip in macadamias and marshmallows. Mix and spoon on top of the white chocolate mixture in the cones. Give the cones a shake to settle and even out the chocolate mix. Store in a cool place overnight. Me...it's my arctic laundry.

Next day peel off the cardboard.......and they should look like this.

Earlier in the week I purchased some plain white plates or you could do festive Christmas plates......whatever you feel is the "look" you want to go for.

Cellophane and some christmassy ribbon and hanging decorations.....again, use your own imagination. 

Wrap and give them a Christmas bling makeover.........
