FORAGING IN THE SOUTHERN HIGHLANDS

I am guilty as charged! I am a forager and proud of it! Is it because I have Greek blood coursing through my veins and a love of fresh food? Or is it because my mother taught me the value of not letting things go to waste. Either way I forage and derive great joy from it. My husband (Welsh) is of the same mindset, thank goodness and we have many adventures.

What to do with this bounty?

Some wild plums will go into a vase...... and the rest will be popped into the oven with just a sprinkling of brown sugar and five spice. A nice slow cook and this will be great with the Christmas ham. They have a bit of tartness which should compliment it perfectly.

A BUCKET OF HOLLY.....

I love the fact that its not just food that is collected but branches, leaves, ivy......you are only limited by your imagination.

Are you a born forager? What has been your best find?
