THIS WEEK IN THE KITCHEN.............CANDIED CUMQUATS...RIDICULOUSLY EASY.

I finally got around to deciding what to do with those luscious vitamin C packed cumquats that were picked a few weeks ago. They patiently waited in the fridge while I pondered..... 

Cumquat marmalade was a definite, and that will be on the blog next week.  Nothing makes me happier than to wake up in the morning and gaze into my pantry and see a bright orange row of marmalade filled jars first thing in the morning. The slightly tangy-bitter flavour always brightens up the darkest of winter days.

Since I had so many I wanted to try another recipe....something different....something EASY.

CANDIED CUMQUATS....I CALL THESE MY TART ANYTHING UP IN A JAR! Well almost anything.......

Salads, pork, duck, cheesecakes, or even with chocolate ice cream. Or you can do what I do, which is to sneak a couple out of the fridge and just eat them straight. Sticky gooey yummyness!

 

The easy part...slicing them into rounds.

The fiddly part.....removing the seeds. I found by slicing them like that, the removal of seeds was a lot easier. 

If I don't have vanilla beans, I usually have vanilla paste which I find is just as good. It lasts for ages too. Caster sugar. Don't worry recipe is further down the page.

Combine sugar and water in a medium saucepan. Then 1/2 teaspoon vanilla bean paste. Stir over medium heat until sugar is dissolved. Add cumquats and reduce heat. 

Strain. 

How amazing do they look! Sticky and delicious.

THE RECIPE - CANDIED CUMQUAT

2 CUPS WATER

2 CUPS SUGAR

1 VANILLA BEAN - SPLIT LENGTHWISE ( OR 1/2 TEASPOON VANILLA PASTE)

ABOUT 25 MEDIUM CUMQUATS SLICED CROSSWISE (SEEDS REMOVED)

METHOD

COMBINE WATER AND SUGAR IN MEDIUM SAUCEPAN. SCRAPE IN SEEDS FROM VANILLA BEAN OR PASTE. STIR OVER MEDIUM HEAT UNTIL SUGAR DISSOLVES. ADD CUMQUATS - REDUCE HEAT. SIMMER UNTIL CUMQUAT SLICES ARE TRANSLUCENT, ABOUT 25 MINUTES. REMOVE FROM HEAT, COOL CUMQUATS IN SYRUP. STRAIN CUMQUATS. RETURN REMAINING SYRUP TO SAME SAUCEPAN AND BOIL UNTIL REDUCED TO 1  1/4 CUPS. ABOUT 8 MINUTES.

PUT IN CLEAN AND STERILISED JARS. STORE IN FRIDGE.

Fancy up a tart..........invite a friend over for afternoon tea. As I said in the beginning.... ridiculously easy!
