I have been making this dish for over 40 years, I can't believe it...40 years! I can cook this meal in my sleep. There's no need to open a recipe book, it's ingrained, and when I open the freezer up.......and looking back at me is...lamb mince.....Keftethes it is!

I remember standing next to my mum in the kitchen when I was a young gal, and we would make the Keftethes together....just like she did with her mum.

Preheat oven to 175 degrees

500 grams lamb mince

1 egg

3 tablespoons chopped parsley

1/2 cup tomato puree- reserve another 1/2 cup for later

1 small grated onion

2 cloves garlic

1/2 cup panko breadcrumbs

2 or 3 potatoes sliced

Olive oil

S & P

Greek Oregano

A splash of water

Everything goes into one bowl

Grate onion - sprinkle oregano on top of the Keftethes just before they go into the oven -Peel and slice potatoes

Now get down and dirty.....love this part.

This is what they should look like....large enough to fit on a potato round.

Slice potatoes fairly thick, otherwise they will cook too quickly.

Olive oil into the bottom of a heavy baking dish......potato slices go in first and then place Keftethes on top...drizzle tomatoes puree...sprinkle oregano.. I also drizzle a little extra olive oil on top. Pour a little water into the pan- 1/4 cup - I find this keeps things juicy and moist.

This is smelling pretty good and it's not even cooked........

Tip: When you put in the potatoes flip them over so they are oiled on both sides.

Cook for approx 45 minutes - make sure the oven is not too hot as the Keftethes will cook on the outside and be quite raw inside. Keep checking.

Meanwhile......... make a quick salad.....this is my.... what ever is in the veggie garden salad.

Looks nice and colourful.

Set a table under a tree or a balcony......we have had stunningly warm days in the Southern Highlands and are making the most of the sunshine and warmth.

Plate up... I also crumble some feta on top of my Keftethes......because as we know feta goes with anything Greek.

Kali Orexi everyone....hope you try this easy Greek dish...
