Hands up if you have gone into a shop, picked up an apricot....sniffed it....
No apricoty smell!

I don't know about you, but when I look at a piece of fruit and it has that glorious colour of summer....I expect...yes expect... to get a waft of ripe honest to goodness fruit.
Sadly this is not the case (insert sad face). Is it because they are picked too early for transportation? Spraying? Variety?
All I know, there is nothing like having a mini orchard in your backyard...
Even if you have room for one tree, at least you will get to pick, preserve, eat and hopefully..... inhale a luscious fruity smell.
To stand under an apricot tree, with dappled sunlight glinting through and picking your own basket of fruit is truly one of life's simple pleasures.
You will get friendly little mice come in and have a gnaw.
You will get mummified...yes mummified fruit.
And then you will get some absolute beauties that are the essence of summer!
What better way to showcase these ......in a really really simple dessert!
Normally I would not put a split fruit in a photograph...but this is the real deal and there is absolutely nothing wrong with blemishes and the odd split in a fruit skin.
It still tastes bloody unreal!
1/4 CUP CASTER SUGAR
1 VANILLA POD
PALM SUGAR FOR EXTRA SPRINKLING ON TOP
Take out the stones and scrape out the vanilla bean then toss the apricots to coat.
Place them onto a tray or baking dish lined with baking paper and sprinkle with the caster sugar. Pop them under a grill for 5 minutes or so.
They will come out all soft and unctuous. Sprinkle extra palm sugar on top.....
I serve this with coconut yoghurt...which, I have gone totally nuts over!
You can serve with cream or ice-cream but if you haven't tried coconut yoghurt, do yourself a favour.
To me there is nothing more simple than grilling fresh fruit.
Lets face it this is the time of year where you gotta keep it simple!
That's my mantra...simple, simple, simple...
