SEMI DRIED TOMATOES

This is all you are going to need....3 ingredients

How many times have you gone and bought semi dried tomatoes from a supermarket and found that they were bordering on rubber. Chewy, and sometimes weird tasting.

I'm sure if I dropped one on the floor, it would bounce..... and what about flavour...what flavour. They don't smell, or taste like a tomatoes, and those herbs! YUK!  Once you have roasted these babies off, you will never buy those store ones again. Sorry Coles/Woolies.

Slice tomatoes in half, thinly slice garlic, rip the rosemary, massage some olive oil through this lot, s & p

Spread onto a baking tray.....

Pop into a slow oven....say 120 degrees for approx. 3 hours.

Nice and slow.....

Sweet tasting with hints of garlic and the rosemary finishes it off beautifully. I find if you use too many types of herbs it just muddy's up the flavour. Scoop into a jar and cover with oil.

Simple and uncomplicated flavours.

I had some on my avocado on toast for brekkie this morning.

Great with cheese, sprinkle on a homemade pizza or a fancy sandwich. YUM 

 Buying the raw ingredients and cooking/making jams/relishes is one way I try to avoid preservatives also having a veggie/herb garden helps with knowing where some of our food comes from.
