JOURNEY OF A CUCUMBER.....

A YEAR IN MY GARDEN CUCUMBERS

I could not believe that by planting just TWO cucumber plants, they have cropped kilos and kilos of cucumbers. The warmer weather here on the South Coast and all that lovely rain has made them go feral. Lucky, I left lots of room for them in the veggie garden to SPREAD! The cucumbers love to hide under the scratchy leaves and you have to have a bit of a hunt everyday for the odd one you might have missed the day before.

I swear they do hide! 

 We have had copious amounts of cool and crispy cucumber sambos, lots of salads with cucumber and of course my all time favourite....Tzatziki.

The problem with Tzatziki is that you only use a couple of cucumbers at a time and there is only so much I can eat.

Went through some of my cookbooks and I came across an oldie but a goodie. This recipe is courtesy of the CWA (Country Women's Association) the gurus of all things pickled.

I've made chutney's, jams etc etc but never a pickle..so here goes. 

INGREDIENTS

2 Medium- sized cucumbers (650g in sliced up weight)

1 Onion

1 tbl salt

1 cup white wine vinegar

1 small red chill, finely chopped

185g sugar

1 tsp turmeric

3 cloves garlic, crushed

Method

Slice unpeeled cucumbers thinly, (I use a mandolin) place in a bowl with the sliced onion , sprinkle with salt and add water to cover well. Leave to stand for 2 hours, then drain well.

Combine the rest of the ingredients in a pan, bring to boil, then remove from heat and leave to stand for 5 mins. Return to heat, bring back to boil and add drained cucumber and onion, turning gently to coat. Cover, and cook gently for 5 minutes. 

Leave mixture to cool until tepid, then bottle and seal.

Allow 3 weeks for flavours to develop. Store in cool, dark place. Refrigerate after opening.

Look at that beautiful turmeric colour.....and we all know how beneficial turmeric is for you!

Leave mixture to cool until tepid, then bottle and seal.

This was a deadset easy recipe I tried a few bits of cucumber.....sweet and delicious.
