Great friends of ours that own the well known and very popular Mezzadellas Restaurant in downtown Berry  needed a place to park their mobile pizza oven. My hand went straight up in the air YES YES! Plenty of room here! On our project list we are planning to build one of our own, but in the meantime.........

And did this bring back some memories from our oven at the Lavender Gate Farm restaurant.........where on a weekend we would churn out 70-100 pizzas a day.

Let's begin by.....

Lighting the oven at least 3 hours prior. Tip: Place timber near the front of the opening to get the base of the oven nice and hot and then push the timber to the back. 

PIZZA DOUGH RECIPE (MAKES APPROX 6 THIN STYLE PIZZAS)

  • 1 KILO 000 STRONG FLOUR
  • 1 TSP OLIVE OIL
  • 3 TSP SALT
  • 2 SACHETS OF YEAST
  • 640 ML LUKEWARM WATER (IF TOO WET ADD MORE FLOUR)
  • SEMOLINA FOR WHEN YOU ROLL OUT

Mix and form into a ball.

Put to bed for 5 minutes....

This is where Arth takes over.....turn onto a floured bench and knead for ten minutes. Rest in a clean bowl for 30 minutes covered with a damp tea towel, place in a warm spot. Divide into 6 even portions....sprinkle semolina on bench and roll out. The semolina helps the pizza not to stick to the paddle when you put the pizza base in the oven.

While the pizza is resting prep your ingredients for pizza toppings. 

We tend to be traditionalists when it comes to pizza toppings.....my pet hate are the "frankenstein" pizzas as I like to call them) satay, indian, etc. Some of you may like that style so you can choose your ingredients accordingly.

  • A variety of meats, chorizo, prosciutto, ham etc
  • sun dried tomatoes
  • olives
  • mushrooms
  • thinly sliced red onion
  • red capsicum
  • bocconcini
  • pizza cheese (I'm a bocconcini girl)
  • Sugo (tomato sauce)
  • Rocket and baby spinach to sprinkle on top (after the pizza is cooked)

Sugo is pretty easy....gently fry off a whole clove of garlic to infuse the oil and discard. I tip in a tin of crushed tomatoes some fresh herbs and gently simmer till thickened. Cool before spreading on pizza dough. Otherwise you will get a doughy gooey mess.

Get the brazier going.....man it gets cold when that sun goes down.
